THE VINTAGE: By all accounts, the quality of grapes in 2022 was exceptional across the board. Unfortunately, the 2022 crop was small, producing on average, just 50% of the yield of previous years. Vintage dated wines from 2022 will be highly sought-after for both their quality and scarcity. Wine outlook for the 2022 vintage is excellent.
Winemaker Notes : Kacaba estate Syrah grapes have very thick skins and are known to have easily extractable tannin and color. Because of this, the grapes undergo a long cold soak before a gentle and cool fermentation to achieve optimal color and aroma. Fermentation is watched closely, and when a balance is found between tannin and fruit. All grapes were harvested using a combination of hand-harvesting and machine pick optimising a state-of-the-art optical sorting machine. These beautifully ripe, mineral-rich berries then permitted to rest for a cold sook to extract colour and tannin. Thereafter the fruit was transferred to open top fermenters and inoculated with select strains of yeast. Temperatures of the fermentation were kept cool to enhance the aromatic characters of the wine. Manual punch-downs and pump-overs were conducted 2-4 daily to ensure optimal colour extraction and structure. The wine was left on the skins post fermentation to add to the complexity and texture of the wine. Before pressing the free run juices were separated and directed towards this Reserve. After the wine was pressed from its skins it was transferred to French and American oak barrels for 17 months of aging.
Tasting Notes : This inky red wine is as decadent as the aromatics that precede it—violets, blueberry, and coffee complexity flow behind hints of sweet tobacco leaves and forest dew. Silky dark chocolate and earthy espresso flavors balance the densely concentrated structure, while hints of black licorice, plum, and clove trail the mid-palate. The wine’s distinct acidity frames an alluring, savory finish.
Food Pairings: This Syrah, subtle and fruity in structure and soft on the palate, pairs exquisitely with all types of peppered red meat, sausage and savoury dishes including braised lamb shank or an herb crusted salmon.
