Cabernet Sauvignon is known for creating wines of amazing density and complexity with both concentrated and nuanced flavors. Hot vintages like 2016 exacerbate these characteristics and allow the grapes to reach ideal levels of ripeness. When making Cabernet Sauvignon Kacaba Vineyards Winery strives to achieve the best color, texture, and spice in any given season.
WINEMAKER NOTES: All fruit for this wine came exclusively from the Kacaba Estate plantings reaching 19 years of maturity in 2016. After a gentle destemming whole berries were moved to five thousand litre stainless steel tanks to cold soak and extract colour, flavours and aromatics character. Then the juice filled with whole cluster grapes was inoculated introducing yeast to start fermentation. Post-ferment the wine was left on skins for one week prior to pressing. The wine was then inoculated for malolactic fermentation (MLF) with selected bacteria. When nearing the completion of MLF the wine was racked and transferred to a combination of new French oak and American oak barrels. After 16 months of barrel maturation the various wine components were blended and then bottled.
TASTING NOTES: Highly aromatic. Anise, stewed fruit with chocolate and cinnamon spice. Very savory and herbaceous. The palate is intense strawberry with very good acidity smooth tannin and very full bodied with a false sense of sweetness from the fruitfulness.
FOOD PAIRINGS: Enjoy this wine with bold braised meats or hearty vegetable based dishes. Baked pasta with strong cheeses and tomato sauce are a must. This Cabernet Sauvignon will hold up to almost anything you pair with it. Avoid spicier foods because the high alcohol will influence the perception of the spice and make it more hot.
