Winemakers notes.
The Merlot from 2006 was picked in late October to achieve optimal ripeness of flavour and tannin levels. The grapes were subsequently hand sorted and destemmed and gently crushed retaining some whole berries during fermentation. Pump overs and punch downs were performed twice daily during the fermentation in order to optimize extraction. The wine was then pressed and transferred into a mix of French and American oak barrel for nine months worth of ageing.
Tasting notes
In the glass, this Merlot is dark ruby in colour with hints of vibrant violet. Elderberry and oak spice leap forth on the nose. Hints of cedar, black currant and coffee round out the first impression of this Merlot in the glass. On the palate; coffee, wild raspberry and blueberry are apparent. The tannin is soft, with well-rounded acidity. The finish is round, soft and voluptuous which are textbook Merlot characteristics.
