The Cabernet Sauvignon Reserve 2007 was chosen by Ontario's winemakers to be the best in Ontario at the 2010 Cuvee Wine Awards as well as being chosen by the industry's wine writers, sommeliers and wine judges to be the best Cabernet Sauvignon of the 2010 Ontario Wine Awards.
An avalanche of flavour, with its dark chocolate and ripe black fruit nose this is immediately unforgettable. Crushed coffee beans enhance the sensational blackberry fruit amidst a palate of great harmony.
Our 2007 Reserve Cabernet Sauvignon like all Kacaba wines started with hand harvesting. The grapes were hand sorted, gently destemmed, and left as whole berries for open top fermentation. The grapes then cold soaked to extract colour, flavour and aromatics from the skins before introducing yeast to start fermentation. During fermentation tanks were hand plunged 4 times a day to further the extraction of colour and flavour. After fermentation the wine was pressed off the skins and moved to a mixture of French and American oak barrels to complete malolactic fermentation & continue the aging process.
