WINEMAKING NOTES: All grapes for this wine were hand-picked and delivered to the winery for a quick sorting prior to a gentle destemming. Afterwards the grapes were transferred to stainless steel tanks for an extended fermentation using multiple yeast strains. During fermentation the cap was pumped over two to three times daily to extract as much colour and tannin as possible. When the fermentation completed the wine was pressed away from the grape skins and racked to French and American oak barrels. Once in barrel malo-lactic bacteria was introduced to soften the acidity and round out the texture of the medium to full bodied wine. After 14 months in barrel, the wine was racked from the individual barrels and assembled again in our stainless steel tanks before being filtered and bottled in the spring of 2017.

TASTING NOTES: On the nose notes of blackberry and juicy plum tempt the red wine lover. Swirl the glass to expose notes of black currant, ripe cherry and toasty oak. The initial taste opens up with bal­anced acidy that is super soft on the palate. The flavours of ripe strawberry and sweet rhubarb with just a hint of vanilla linger on the palate. The finish is underscored by the edge of smooth tannins leading to a gentle smoke flavour and subtle vanilla bean. Give this wine just a little time to breath and evolve in the glass and you will not be disappointed. A great wine for social sipping or for matching with a wide variety of foods. 

 FOOD PAIRING: The fruitful flavours of this Cabernet Sauvignon lend well to food that it will contrast with­ such as peppery mixed greens like arugula, dark chocolate or savoury spices. Try with anything from vegetarian lasagna to braised lamb shoulder with Morrocan spices.
