Rebecca Rosé 2013
This blend of Syrah, Pinot Noir and Cabernet Franc varieties were selected for this unique and refreshing rosé wine. All three varietals were handpicked and sorted before being processed. The Syrah and Pinot Noir underwent a 12 hour cold soak to extract colour before hole berry pressing and cold temperature fermentation. Fermentation was carried forth to near dryness. The Cabernet Franc component was a reserve addition. This refers to the addition of unfermented juice to a dry wine in order to naturally increase its sweetness and fruit forward character. This technique also provides subtle mouth feel and texture.
