Cabernet Sauvignon 51% / Cabernet Franc 49%
Like all premium Kacaba wines the quality starts in the Vineyard. All fruit for this wine underwent extensive crop thinning to lighten the load on the vine and heavy leaf pulling to introduce additional direct sunlight resulting in the production of premium fruit in an exceptional vintage. Fermentation was carried forth in open top fermentations bins for 11 days at a maximum temperature of 90°F. After primary fermentation the wine was pressed off the skins and racked to both French and American oak to create well-integrated flavours and a rich mouthfeel. After 10 months of maturing in barrels our winemaking team assembled the final batch before cold stabilizing and bottling September 2020.
Delicious aromas of red berries, tart cherry and a hint of cassis. Vibrant cranberry and pomegranate are accented by toasted oak and cedar on the finish. The profile is dry with medium tannins and acidity that leaves your mouth salivating. This is a great wine to match with food and will shine over the next 2 to 3 years as a stand alone sipper.
