As growing seasons go, 2012 was everything Niagara winemakers desire. The spring weather was ideal for bud break and cluster development. This was followed by summer days in the 80’s and cool nights in the 50’s: not too hot and not too cold. All of the grapes in the Kacaba vineyards flourished in this weather allowing the grapes to achieve maximum intensity.
Kacaba’s Merlot vineyard is diligently monitored throughout the growing season to balance the crop size and grape quality. Shoot thinning and leaf removal early in the growing season followed by cluster thinning at veraison helps to achieve evenly ripened grapes with concentrated flavors.
All fruit for this full bodied, fruit forward wine was hand harvested assuring top quality. After a quick sorting all clusters underwent a gentle destemming before full berry fermentation. The fruit was fermented at an average of 85°F with gentle pump-overs twice to three times daily for excellent flavor and color extraction. This lush red wine was aged in a combination of new and second fill American and French oak barrels for 16 months for greater complexity. After finishing the aging process this wine was racked, filtered and finally bottled in March 2014.
An enticing nose of cinnamon, currant, plum with subtle hints of herb de province. On the palate enjoy alluring flavours of currant, cherry cordial and spiced plumb complemented by warm baking spice and coffee. A truly juicy and robust wine with great structure.
