Winemaker John Tummon spent many hours tasting in excess of 23 barrel combinations before selecting his 2014 Cabernet Syrah blend. The result blend is a well-balanced wine that embodies the complexities of the Kacaba vineyards plantings. The final product is an opulent and full bodied blend of estate grown Syrah 25% Cabernet Sauvignon at 45%, Cabernet Franc at 30%.
All three grapes varieties were hand harvested separately to achieve full ripeness, then destemmed, but not crushed, leaving a large portion of whole berries for fermentation. The must was fermented at a maximum of 30░C in order to emphasize the dark, fruit favours with manual punchdowns two to three times per day. The rich fruit favoured wines were then racked and pressed from skins and aged separately for 12 months in French (40%) and American (60%) oak barrels
