All fruit for this wine came exclusively from the Kacaba Estate plantings now reaching 18 years of maturity. After a gentle destemming whole berries were moved to five thousand litre stainless steel tanks to cold soak and extract colour, flavours and aromatics character. Then the Cab was inoculated introducing yeast to start fermentation.

Post-ferment the wine was left on skins for one week prior to pressing. The wine was then inoculated for malolactic fermentation (MLF) with selected bacteria. After the completion of MLF the wine was racked and transferred to a combination of French oak and American oak barrels. After 12 months of barrel maturation the various wine components were racked, blended and then bottled in March.

Tasting Notes

Intense ruby red in color, this full bodied cabernet shows aromas of black currant, soft wood smoke and vanilla. On the palate intense flavours of chocolate, plum, blackberry and spice give great complexity.

Food Pairing

The dark fruit flavors and moderate tannins found in our 2014 Cabernet Sauvignon make it a complement to a variety of favourite dishes including braised lamb shanks with rosemary, linguine with roasted mushrooms and radicchio, braised short ribs with celery root puree or Moroccan spiced pork tenderloin.
